Bistrot Casa Lavazza chooses zero-kilometer aromatic herbs and leafy vegetables from Agricooltur

Bistrot Casa Lavazza, located inside the former power plant on Via Bologna in Turin, has chosen to grow aromatic herbs and leafy vegetables for their menu using our aeroponic systems. This historic building, constructed in 1897 by Turin engineer Ermenegildo Perini and completely renovated, is today an example of corporate and collective dining that combines quality and sustainability.

Bistrot Casa Lavazza, which serves approximately 600 meals daily to employees and collaborators of the Lavazza Group, as well as to Turin residents during lunch breaks, has always had an innovative vision of dining. Sustainability is at the heart of their philosophy, and we are proud to share this mission with them.

For this reason, we have installed our aeroponic garden inside the bistrot, providing the freshest aromatic herbs and leafy vegetables. Bistrot Casa Lavazza now features an Hortus Cube, a compact cultivation module complete with germinator, grow lights, and misting system, all integrated into an elegant and functional design. Thanks to our user-friendly app, cultivation is simple and accessible to everyone.

Additionally, the bistrot is equipped with two Aerofresh units and three Microhortus units, which allow the kitchen brigade to always have fresh aromatic herbs for their recipes and leafy vegetables for salads. This integration brings the kitchen closer to nature, allowing chefs to create dishes with surprising flavor and color combinations.

An idea that also appealed to the Michelin-starred restaurant Condividere, where chef Federico Zanasi and his brigade use our aromatic herbs, harvested fresh and not stored in the refrigerator, maintaining all their properties, flavors, and textures intact, enriching each dish with a touch of freshness and quality.
